Sweet Potatoes

Sweet potatoes aren’t actually potatoes at all. They are a starchy, sweet-tasting root vegetable. They are a rich source of fibre, contain an array of vitamins and are high in beta carotene, an antioxidant. 

Sweet potatoes like warm and sandy soil conditions and are very sensitive to frost. Consequently, they thrive in more tropical climates. Our climate doesn’t allow cultivation here, so we import them from the USA for up to 10 months of the year and then from Egypt, Africa and Spain. Our favourite varieties are:

Covington

Covingtons have smooth skin with a rose-coloured hue, speckled with small dark brown spots. The flesh is firm and a vibrant orange that remains bright when cooked.  

Recommended for:
boiling, baking, mashing or roasting.

Seasonality:
available all year round.

2016

Beauregard

Beauregard sweet potatoes are longer in shape. Their skins are reddish-purple and the flesh is a deep-orange which remains bright when cooked.

boiling, baking, mashing or roasting.
