Seafood Provencal

• 30ml olive oil
• 1 large onion finely chopped
• 1 clove garlic crushed
• 1 celery stick finely chopped
• 50ml red wine
• 100ml vegetable stock
• 800g chopped tomatoes tinned
• 10g sugar
• 30g tomato puree
• 20g chopped basil
• Salt and ground black pepper
• 500g fresh mussels
• 200g diced fresh salmon
• 200g diced fresh cod
Heat the oil in a saucepan.
Add the onions and garlic and sauté till cooked.
Add the celery and continue to cook.
Add in wine and simmer for a few minutes.
Add the stock, tinned tomatoes, tomato puree, sugar, basil, salt and pepper.
Bring to the boil and simmer for 5 mins.
Add the fish, cover pan with lid and simmer for 20-25 mins till the fish
is cooked.
Serve with Country Crest Potato Gratin!
