Lemon & Thyme Stuffed Chicken

• 4 large chicken breasts skinned and boned
• 35g butter
• 8-10 spring onions finely chopped
• 200g sausage meat
• 50g fresh white bread crumbs
• Finely grated zest and juice of 1 lemon
• 2 tbsp chopped thyme
• 4 tbsp chopped flat leaf parsley
• Salt and fresh ground pepper

 

To make the stuffing
Melt the butter in a pan and sweat the spring onion for 3-4 mins until soft.
Add the remaining ingredients and mix thoroughly to combine, allow to cool
Lay the chicken breasts flat and slice in half to make a small pocket in side
Stuff the chicken with the stuffing
Pre heat oven 180 Degrees/C gas 4
Place on baking tray and cook for 30 mines or until chicken is cooked

TIP - For extra flavour rub the chicken breast with lemon juice, fresh thyme, salt and pepper

For Perfect Rosti
Combine 8 finely grated Rooster potatoes with 1 finely chopped large onion and a little salt and pepper. Form into ‘cakes’. Fry in butter until golden brown.
